Mississippi Pot Roast

Mississippi Pot Roast rich, tender, juicy

Ingredients

     


  • 4 LB chuck roast 

  • Montreal seasoning 

  • Large onion chopped  

  • 1 small bag baby carrots 

  • 8 oz package mushrooms Sliced 

  • 1 16 oz Jar pepperoncini peppers with juice 

  • Chopped garlic to your hearts content (however much you want) 

  • 1 packet beef stew mix 

  • 1 Packet Au jus gravy mix  

  • 1 Packet Ranch dressing mix 

  • 1 15 oz can tomato sauce  

  • 1 stick butter sliced into several pieces 

  • 2 tbs oil 

  • Salt and pepper 

Preparation

Step 1

In a large Dutch oven  heat the oil add meat and Montreal seasoning.  Cook turning on all sides for 2-3 minutes per side till seared. 


Step 2

Add onion, carrots, garlic and peppers with juice. 


Step 3

Add the packets of Stew, Au Jus and Ranch mix and Tomato Sauce 

Salt and pepper to taste 


Step 4

Add mushrooms  Give it a bit of a stir  Add butter in several places  


Step 5

Place lid on pot.  Cook low and slow stirring occasionally for 4-5 hours till meat is fall apart tender.   

 

Serve hot over mashed potato's or rice
